authentic Spanish Paella Recipe

Yep that's right an authentic Spanish Paella Recipe. How do I know it's the real thing .... my grandfather was from Santander, Spain.... this is his mother's recipe...... enjoy!

1 lb. chicken thighs - grilled or roasted to medium
6 small chorizo sausage* - grilled or sautéed to cook through
6 cups chicken stock
1 cup diced tomatoes
1 Tbs. saffron
1/4 cup olive oil
2 medium onions - diced
1 red bell pepper - diced
3 cloves garlic - minced
3 cups short grain Spanish rice
2 Tbs. green olives (picholine)
1 cup fresh English peas
10 mussels
1/2 lb. calamari
10 large shrimp
2 lemons
2 red peppers - roasted, peeled and sliced in strips

Bring the chicken stock, tomatoes and saffron to a boil in a small stockpot. Reduce the heat and keep the stock simmering while making the rest of the Paella. Scrub the seafood to remove any debris. Heat the olive oil and sauté the onions, peppers and garlic in a Paella pan. Add the rice to the oil and stir to coat all of the grains. Add most of the stock and cook for about 15 minutes. Add the seafood, peas, chorizo, chicken and olives to the rice. Bury the seafood under the rice. Cook for an additional 10 minutes on the stove top. Arrange the roasted red peppers strips on top of the Paella and place half of a lemon in the center. Cook for an additional 10 or 15 minutes in a 350 degree oven.



*You have to use the real Chorizo, or it's no good, no substitutions try: www.goya.com if you can't find it.
