CAJUN BLACKENED CRAWFISH TACOS

I had a fusion dish last night at a local restaurant...Cajun blackened crawfish tacos... They were very good. I think that Cajun Seasoning lends itself to Mexican food. Here is a recipe for Cajun seasoning and my famous salsa...Use the seasoning to blacken seafood (fish or shrimp will do -- for those of you who are shy about eating them southern mud bugs...lol) and place in a warm tortilla with lettuce, tomatoes, cheese and homemade salsa....
Cajun Seasoning
2 T. garlic powder
2 T. ground red pepper (cayenne)
2 T. black pepper
2 T. dried sweet basil leaves
2 T. salt
1 T. dried oregano leaves
1 T. ground white pepper
1 T. onion powder
Combine all ingredients and store in a tightly sealed container. Makes ¾ cup seasoning.
Cerveza Salsa
2-3 Large tomatoes (or 1 can)
2 serrano chilis minced
1/2 a red onion diced
2(+) cloves garlic minced
1/4 C cilantr chopped
3 T. beer (drink the rest)
1/2 t. balsamic vinegar
1 t white wine vinegar
1 t olive oil
Combine all ingredients, toss and serve with chips... If you like you can process it briefy in a food processor for a smoother texture. Make two batches of this stuff 'cause it goes fast...My brother in-law can eat two bowls all by himself...LOL
