Serves 6 to 8

3 medium cucumbers
1 Tbs. salt
1/3 cup white vinegar
2 Tbs. vegetable oil
2 Tbs. lemon juice
1 Tbs. chopped chives
1/2 tsp. Hungarian paprika

Peel the cucumbers, cut them in half lengthwise and remove the seeds. Slice them as thinly as possible. I use the 2mm slicing disk on the food processor. Toss the cucumber slices with the salt in a large mixing bowl. Cover the bowl with a towel and put a heavy weight on top, like a brick. Let stand for 2 hours.

Drain off the liquid and pat the cucumber slices dry. Whisk together the remaining ingredients and toss well with the cucumber. Serve cold.
