Marinaded Spanish aubergines.
Ingredients:
* 500 gr aubergine
* 1 green paprika
* 1 baby tomato
* 3 tablespoon Japanese soy sauce
* 2 teaspoons sesame oil
* 1 tablespoon Cider vinegar
* 1 tablespoon Sesamseeds
* 1 teaspoons grated ginger
* salt
Bring some water to a boil (just enough water to cook the aubergines)
Clean and wash the aubergines and cut them in thin slices about 0,5 cm
(to handle the aubergines it is best to cut them in a fan way, so don’t cut right to the end but leave 1 cm so they don’t part when cooking)
Cook or steam the aubergines for about 7 minutes.
Drain and let the aubergines cool down.
Cut loose the aubergines and put them in a oven proof dish. Make the sauce, mix the Japanese soy sauce, sesame oil, Cider vinegar, grated ginger and the salt.
Roast the sesame seeds and add to the sauce. Pour the sauce over the aubergines and leave for a while so the aubergines get the flavour of the sauce.
Before serving cut the cleaned paprika in long slices and clean the baby tomato and garnish the aubergines with this. Add some parsley and serv.
