Tuna Fish Cerviche Style

This a great change of pace from tuna with mayo. My friend Monica introduced me to this recipe and I'll never go back to tuna with mayo again. Give your boring old tuna fish sandwich the taste of Mexico with this simple but tasty recipe.

Mix one can of tuna with ½ small diced tomato, a handful of diced red onion, fresh cilantro to taste, and the juice of ½ a lime. Add salt and pepper to taste and serve on a crunchy bread with lettuce and tomatoes. Top with a dash of vinaigrette if desired.

This is also a great way to top a salad...or serve as an appetizer with some olive oil, lemon wedges, cut veggies and crackers.
