FOCACCIA 1-cup warm water 2-teaspoon yeast 1-tablespoon sugar 1-teaspoon salt 3 tablespoons olive oil 2 3/4 cup unbleached white flower toping 3 tablespoons olive oil 2 medium cloves garlic (slice garlic into oil, let step remove when ready to use oil) 1 teaspoon dried rosemary crushed Salt and pepper 1) Pour warm water into mixing bowl, add yeast and sugar and allow yeast to soften stir in 1 1/2 cups flower and salt and beat vigorously for a minute or so with a wooden spoon 2) Blend in olive oil then another 1/2-cup flower scrape bowl then work in another 1/2-cup flower, begin kneading. 3) Tip dough out onto counter add the least of amount of flower as possible, kneed several minutes until dough feels smooth slightly sticky and soft. wash out bowl add couple tablespoon olive oil add dough cover with plastic and let rise about 1 1/2 hours or until doubled. 4) Scrape out dough kneed briefly to remove air put 1 teaspoon oil on a cookie sheet and spread evenly put dough in center and begin to pat it out to an 8 inch circle let dough rest five minutes and pat out to twelve inch circle cover with oiled plastic let rise 45 minutes 5) using oiled fingertips dimpled the dough about one inch apart brush with oil and shake on seasoning. Bake 400 for twenty minutes.
