A man, a can, a plan

2 X 170g cans tuna chinks in spring water from Woolies
500g frozen peas
1 box of Tastic rapid rice (I think it’s a 500g pack – I’ll check)
1 Lemon
Olive Oil
2 cloves of garlic
Serves 2

How to make it:
Drain tuna and peel half of the lemon with potato peeler. Slice lemon peel thinly. Heat a little oil in a pan, and sauté in garlic for about a minute. Add tuna, lemon peel, salt and pepper and heat through. Squeeze lemon juice over to taste. Remove and keep warm. Cook peas in boiling water and add to tuna mixture. Cook rice as per instructions on the packet and toss with tuna mixture. Drizzle with olive oil and extra lemon juice if necessary and serve.

Note: Take left overs to the office and eat, hot or cold for lunch.
