INGREDIENTS For the Kofta's (Balls) 1 Kilo Ground Beef Oil for deep frying 6 to 7 Medium sized Green Chillies Finely chopped 2 Onions Chopped Fine 2 Cups Green Coriander (Cilantro) One Half Teaspoon Table Salt For the Curry: 5 to 6 Serving Spoons Cooking Oil 2 lbs. Potatoes Peeled and cut into quarters 3 to 4 Teaspoons (Heaped) Red Kashmiri Chillie Powder 2 to 3 Teaspoons Cumin Powder 2 to 3 Teaspoons Coriander Powder One half Teaspoon Turmeric (Saffron) 2 Teaspoons Poppy Seeds (Khas Khas,) Ground One Half Teaspoon Mustard Seed, Ground 3 Onions finely chopped 250 Ml. Coconut Milk Salt to Taste (Remember you already have salt in the Kofta's) For the Coconut Rice: 1 Kilo Basmati Rice 5 to 6 Serving Spoons Cooking Oil 250 ml. Coconut Milk 2 Teaspoons Saffron Salt to Taste METHOD For Making the Kofta's (Balls) Mix the onions, chillies, salt and coriander into the Ground Meat and make into balls, using the palm of your hands to decide the size and keep aside when ready. Fry in oil till brown on the outsides and place on a sieve to let the excess oil drain. The Curry: Mix all ingredients, except oil, onions and potatoes, with the coconut milk into a paste. Heat oil & when hot fry onions till a golden brown and add the Masala mix and fry on medium to low flame 15 minutes. Add water and potatoes and cook on medium flame. While potatoes are cooking you can fry the koftas, as instructed above. When potatoes are almost cooked, add koftas and cook on medium flame till potatoes are done, "voila" your Bad Word Curry is ready. The Yellow Rice: Wash the rice, (Basmati is the finest Long Grain rice in India and very tasty), and let it soak for 45 Minutes. Heat oil and when hot, strain all water from the rice and let the rice fry for a few minutes. Add the coconut Milk and Saffron which gives it the yellow colour and cook on medium flame. When the rice starts coming up to the surface add one cup of warm water at a time till rice is cooked, and this you will only know when you check the grains from time to time till they feel good to the touch. Do not add too much water then you will get "PISH-PASH" rice. Making the Koftas: You may add 2 Eggs to the mixture to bind the kofta's or soak 2 Slices of stale bread in water and add to the mixture. This eliminates the frying of the Kofta's. |
