Apple Recipes
          Wrap-Apple Sandwiches

2 med. apples
1 cup water
2 tlbs. lemon juice
3 tlbs. mayonnaise
3 tlbs. yellow mustard
6 (12-inch) tortillas
12 slices cooked ham
12 slices cheese
3 cups chopped lettuce

core apples, do not peel. cut each apple
into 12 thin slices. stir togeather water
and lemon juice; drop slices of apples
into mixture to prevent browning. combie
mustard and mayonnaise in sm. bowl un-
til well blended. remove apple slices and
pat dry. spread each flour tortilla with 1-
tlbs. mustard-mayo dressing; layer 2 slices
of ham, 2 slices of cheese, apple slices,       and lettuce. roll tortillas tightly and cut in
half diagonally.

                       serves 6
              Apple Cabbage Salad

1/3 cup honey
1/4 cup lemon juice
1/2 tea. grated lime zest
1/2 tea. dry mustard
1/8 tea. salt
3 apples
4 cups shredded cabbage
2 kiwifruit, peeled and sliced
2 green onions, chopped
lettuce leaves

in a large bowl, whisk together honey,
lime juice, lime zest, mustard, and salt to
make dressing.core 1 apple and cut into        thin strips;add to dressing .add cabbage,     kiwifruit, green onion; toss well.
to serve, core and slice remaining 2 apples;
arrange on top of lettuce. mound cabbage
mixture in center.

                  Apple Salsa

3 med. apples, cored and chopped
2 (4oz.) cans diced green chiles
1/2 cup raisins
1/2 cup thinly sliced green onions
1/3 cup cider vinegar
3 tlbs. brown sugar
1/4 tea. ground cumin

  combine apples, chiles, raisins, onions,
  vinegar, sugar and cumin in a med. bowl
  cover and chill at least 1 hr. serve with
  grilled chicken or pork.

                makes about 2 cups

                Apple Snacks

2 apples, cored and cut into wedges
lemon juice
1/2 cup chunky peanut butter
1/2 tea. cinnamon
6 whole graham crackers

  dip apple wedges into lemon juice and
place in a single layer on a microwave
safe plate. cover loosely with waxed
paper and microwave on high for 3/12
to 4 mins. rotate halfway through. drain
apples on paper towels. in a sm. bowl
mix peanut butter, honey, and cinnamon.
snap graham crackers in half. spread with
peanut butter mixture and 2 apple wedges
onto each cracker.

                       serves 6
