Strawberry  Cheesecake
Use your favorite  crumb crust recipe. Saving 1/2 c. for topping.

Filling:

1 small  pkg. strawberry jello               85g

1/4 oz. unflavored gelatin (1/2 tbsp.)      7

1 c. boiling water                               225ml                       

1 c. fresh or frozen strawberries          425g

~Mix together until jello is dissolved, add
strawberries. 

~Chill until syrupy.

1 small cream cheese                           250g

2/3 c. icing sugar                                 150ml

~Beat cream cheese & icing sugar together til fluffy.

2 c. whipping cream  (1 pt.)                 500ml

~Whip the cream til stiff.

~Fold into cheese & icing sugar  mixture.  Then fold into thickened jello.

~Pour over crumb crust.

~Sprinkle the remaining crumbs over top.

~Chill well.

~Cuts into 10 to 12 pieces.

& whipped cream if desired.
