Scalloped Potatoes

6 medium potatoes, thinly sliced
3 Tbsp. butter
2/3 cup chopped onion
3 Tbsp. flour
1 1/2 tsp. salt
dash pepper
1 1/2 cups milk
paprika for garnish

Preheat oven to 375. Cook onions in hot butter about 5 minutes. Stir in flour, salt & pepper. Stir in milk & cook until thickened. In 2 quart casserole, arrange half of potatoes. Pour half of mixture over potatoes. Repeat with the rest. Sprinkle with paprika. Bake covered 45 minutes. Uncover and bake 15 minutes longer.

Potatoes Au Gratin

6 cups thinly sliced potatoes
1 1/2 tsp. salt
2 Tbsp. butter, melted
1- 4oz pack shredded cheddar cheese
1/2 cup fresh bread crumbs

Preheat oven to 425. In greased 13" by 9" baking pan, toss potatoes & salt and arrange in even layer. Drizzle melted butter over potatoes, sprinkle with cheese & bread crumbs. Bake 20 minutes or until tender.

New potatoes with lemon & chives

2 pounds new potatoes
salt
1/4 cup butter
grated peel of 1 lemon
2 tbsp. chopped chives
2 tbsp. lemon juice

In large pan in one inch boiling water, heat potatoes and one tsp salt to boiling, cover and cook 15 to 20 minutes until fork tender, drain. Cool potatoes slightly, then peel, return to sauce pan. Add 1 tsp salt and remaining ingredients and heat.

Green Beans Hong Kong

1 can french style green beans
2 Tbsp. chopped onion
1 clove garlic
bacon
bacon drippings
1 Tbsp. soy sauce

Cut 3 slices of bacon in quarters. Saute until slightly crisp. Drain off all but 2 Tbsp. of bacon drippings. Add onion and chopped garlic to pan. Cook 2 minutes. Drain the can of green beans and add to pan. Add soy sauce to the mixture. Toss until beans are heated.

Macaroni & Cheese

2 cups (8 ounces) dry elbow macaroni
4 tablespoons nonfat dry milk
2 tablespoons all-purpose flour
1 tablespoon butter or margarine, melted
1 1/4 cup boiling water
3 cups (12 ounces) shredded American cheese
1/4 teaspoon kosher salt

Preheat oven to 350 degrees. Cook macaroni 1 to 2 minutes longer than package directions,
so pasta is soft but not mushy. Drain.

In a mixing bowl, combine dry milk, flour and butter. Whisking constantly,
gradually add in boiling water. Add 1 cup of cheese and continue whisking
until smooth and creamy, abut 2 to 3 minutes. Fold in macaroni,
1 more cup of cheese, and salt.

Transfer to lightly greased 11- by 7-inch casserole dish and cover with foil.
Bake 25 to 30 minutes or until sauce in center of casserole is thick and creamy.
Remove foil and sprinkle remaining 1 cup of shredded cheese evenly over the top.
Return to oven until cheese melts.
