Baking Tips:
EGGS: They help your baked goods rise. Use at room temperature. If too cold, warm in bowl of hot water.

SHORTENING: Do not substitute margarine spreads because the water content changes the product. I use a non-transfatty substitute called SmartBalance. It can be found where the shortening is sold in most supermarkets

BUTTER: SmartBalance also makes a margarine that can be used in all baking just like butter and it has a buttery flavor!

Don't have one of the ingredients, but anxious to try that new recipe? Here are some substitutes that work......
1 CUP WHOLE MILK: 1/2 cup evaporated milk plus 1/2 cup water
1 CUP BUTTERMILK: 1 cup plain yogurt or 1 tbsp. either vinegar or lemon juice plus milk to equal 1 cup
1 CUP SOUR MILK: 1 Tbsp. vinegar or lemon juice & milk to equal 1 cup

1 CUP CAKE FLOUR: 1 cup less 2 tbsp. all purpose sifted flour
SELF-RISING FLOUR: 1-1/2 tsp. baking powder & 1/2 tsp. salt plus all-purpose flour to equal 1 cup

BROWN SUGAR: same amount of white granulated sugar
HONEY: 1-1/4 cups granulated sugar = 1 cup honey
MOLASSES: 3/4 cup granulated sugar = 1 cup molasses

CORN STARCH: 2 tbsp. all-purpose flour = 1 tbsp. corn starch
BAKING POWDER: 1/4 tsp. baking soda + 1/2 tsp. cream of  tartar = 1 tsp.
1 OZ. (1 SQUARE) UNSWEETENED CHOCOLATE: 3 tbsp. unsweetened cocoa powder plus 1 tbsp. butter or margarine
BAR-B-QUE  literally means beard to tail. Granni's mom grew up on a farm where  they not only raised all their own food, but they  used everything on the pig except his squeal!

Did you know that carrots are rich in beta carotene? Beta carotene is fat-soluble; cook carrots with a touch of butter or oil for maximum absorption in the body. ADD grated carrots to: salads, meatloaf mixtures, pasta sauces, cookie & cake batters. BOIL cut carrots with potatoes & mash as usual. FREEZE leftover cooked carrots & add to canned or homemade soup later (&  any other leftover veggies).
