SAVAGE HULK
The Incredible Hulk Vol.1 #2
This is the most-widely known Hulk incarnation of them all. Usually uttering sentences like "Hulk Smash!" and "Hulk is the strongest one there is!", the Savage Hulk (also referred to as the Green Hulk), is one of the strongest manifestations of the Hulk (initial strengh is around 100 tons). The madder or angrier he gets, the stronger he gets. It is not yet revealed if his strength has a limit. But so far, he has not reached it. He has done the seemingly impossible, from destroying an asteroid larger than the Earth, to grasping an energy field. See more feats of strength here.
But he's biggest flaw is perhaps, his intellect level. He's got the IQ of a kid, and behaves like one. He reacts to the environment with caprices, and lack of maturity. But he also grows tender when someone expresses him love, understanding, and support. He also likes peaceful nature (forests, birds, deers, etc.). Despise his childish intelligence, he's corporal abilities, and coordination are superb, and his aim is perfect.

GREY HULK
The Incredible Hulk Vol.1 #1
Hulk in the beginning was gray, not green. Stan Lee (Hulk's co-creator), reveals that his original intention was to make him gray. But since the printers of that time (1962) did such a lousy job with that color, he decided to change it to green, just like that. The gray Hulk only appeared in the debut, and was "resurrected" many years later.
The Gray Hulk is weaker than the Savage Hulk (initial strengh is around 70 tons). Although he gets stronger as he gets angrier, the Gray Hulk's strength does not increase as fast as the Savage Hulk's. The Gray Hulk is also shorter than the Savage Hulk.
But his intellect is that of a normal human being, winning over the Savage Hulk in this aspect.

Professor
The Incredible Hulk Vol.2 #377
This incarnation was first revealed to be the merging of the Bruce, Savage, and Gray personas. Thus it was known as the Merged Hulk. But it was later revealed (writer Paul Jenkins) that the Professor was in fact a new Hulk incarnation created by Doc Samson to stableize the Multiple Personality Dissorder (MPD) of Robert Bruce Banner. The Professor has Banner's genius intellect, the Savage Hulk's strengh (initial strength level which is around 100 tons), and the Gray Hulk impetus. He's taller and broader than the Savage Hulk. At first it seems like the perfect incarnation. But it is more vulnerable than the Savage Hulk (it's been hurt often), and it cannot reach the level of strenght of the Savage Hulk either because Banner is in control.
