Pasta & Pumpkin             

1 cup grated fresh pumpkin (raw)
1 package thin spaghetti noodles
3 tbls  (Butter will suffice but Olive oil is preferable )           
A dash of salt
2 cloves garlic 
1/4 cup chopped parsley

Prepare noodles as per package directions

Crush garlic to a fine pulp. Sauté in olive oil or butter and salt until soft. 
Add pumpkin and sauté 2 - 3 minutes. Toss with pasta and serve.
