There are quite a number of Side
Quests in Final Fantasy 8. I will just list the main ones (since others are not
so rewarding).
Centra Ruins (Odin's
Quest)- Once Balamb Garden is mobile
This place is not for jokes, that's because those deadly monsters inside are capable of 1-hit kills, their normal attacks are also equally powerful. With only 20 min time limit, you can't afford to fight these powerful monsters. So it is suggested that you use Diablos' GF abilities: Enc-Half or Enc-None.
Once you are ready, follow the various staircases until you reach an altar, which is an elevator. Once you get off from the elevator, take the left ladder and flip the switch inside the room, then climb back down the ladder. You notice an altar in the front of the elevator is now lit. Examine it and a staircase should appear on the right. Follow the stairs, on the next level, there is a large demon statue with one red eye. Climb the short ladder on the left, take the eye from the statue and climb up the stairs on the right side of the area to the top of the tower.
Go to the left and climb the side of the dome to find a second demon statue with a red eye. Place the left eye in and a code will appear (you may want to take it down). Now, take both eyes out of the demon statue and go downstairs to the first demon statue. Place both eyes in the demon statue, a input code will appear, enter the code, a door would unlock below. Behind the door you will find Odin. Odin will not attack, so pour everything you got before the time limit ends. If you are short on time, cast haste on your party members. Remember to mug Luck-J Scroll from Odin!
Challenage CC members
in game of cards in Balamb Garden (rare cards that refines into useful items)-
Disc Three
You are required to beat the CC group members in the oder from lowest-ranking to highest ranking. If they don't challenage you, it means you haven't been playing enough card games in Garden. Play a number of card games in Garden before trying again.

(#1)Jack- In the Balamb Garden Hallway near the directory. (#2)Club-appears randomly near the Balamb Garden Hallway near the entrance of the Cafeteria. (#3)Diamond- In the Balamb Garden Hallway near the directory (the pair of female SeeD cadets). (#4)Spade- The two people that appears randomly on the 2nd floor near the lift. (#5)Heart- Xu, on the bridge. She has the Carbuncle Card. (#6)Joker- Inside Training Center, appears randomly and he has the Laviathan Card. (#7)King- Talk to Nida on the Bridge and then visit the Infirmary and challenge Dr. Kadowaki to a game of cards. Return to your room and take a nap. King will appear while you are resting.
Quest to defeat Ultima
Weapon and aquire Eden GF (after you defeat Bahamut)- Disc three
Try getting everyone's best weapons espcially Squall's which enables him to use Lion Heart Limit Break. There is not really a need for females to upgrade their weapon unlike Zell and Irvine whose Limit Breaks damage depends on their weapons.
Floor 2: Use Two units to open door to floor 3: sector 2
Floor 3: Use the monitor on the left under the stairs and spend 4 units to open the steam room. There you can use the Esuna Draw Point and use the station there to recharge 7 units for a total of 17 units. Then, use the station in the main rooom and use one unit to open the door to Floor 4: Sector 6.
Floor 4: Use one unit to open door to Floor 5: Sector 9.
Floor 5: Use one unit to open door to floor 6.
Floor 6: Use four units to open the door into the excavation site.
Excavation Site: spend the last 10 units to activate the final control panel and face Ultima Weapon. A tip for you guys is to use doomtrain, have revive or item ability on the other two party members other than Squall. Have Aura cast on your party members. Ultima should fall quickly because of weakened defences and constant limit breaks.
Defeat Omega Weapon-
Disc Four, Ultimecia's Castle
This is optional battle which gives little benefits and you don't need to fight it to finish the game. This is a test, to test how good you are.....If you win you will get a new heading, "Proof of Omega", in the tutorial section of the main menu.
I am sure you wanna get prepared before you fight, so here goes: Refine 100 megalixirs from Bahamut Card (If you got it), Refine 10 Holy Wars from the Gilgamesh Card (a Must) and Refine 100 Heroes from Laguna Card (If you got it). Junction 100 Death Spells to your Stat-Def. Omega uses a level 5 death spell that wipes out the entire party in a single shot. Have a Character keep on summoning Doomtrain and eden all the way, also have another to cast aura with triple on all. Note that these two roles should not be taken by Squall as he must be the one constantly using limit breaks.
When you are ready, leave your main party at the switch point near the fountain. Take control of your secondary party, Exit the Front Foyer via upper-right side of the room. Go down the stairs and pull the rope to ring the bell. Doing so will summon the Omega Weapon, use the switch point in the same room and switch to your main party and run to the Chapel. You will see Omega Weapon waiting there, just run to it to initiate a fight.
Start off by casting Triple or summon Cerberus then followed by aura. Next use holy war, Summon Doomtrain and start to do serious damage by using Limit Breaks and summoning Eden. Aura should end before Holy War, and before Holy War ends you might want to draw Ultima from Omega Weapon. Just repeat this pattern and Omega should fall quickly.
