Irish Potato Cakes

3 tb Butter or margarine
2 c Self-rising flour
Salt 1 1/2 c Mashed potatoes
1/4 c Milk

Mix butter into flour; add good pinch of salt. Mix in mashed potato; pour in milk to make soft dough. Roll out on lightly floured surface; cut into rounds 3 inches across. Put on greased baking sheet; bake at 425 degrees F for 15 to 20 minutes. Split; serve hot with butter.
Carla’s Easy Chicken and Dumplings

4 boneless, skinless chicken breasts
1 can cream of chicken soup
1 can chicken gravy
¼ tsp garlic powder
3 cans buttermilk biscuits
salt and pepper to taste

Boil chicken breasts in large pot of water for 1 to 1 ½ hours or until thoroughly cooked.  Remove chicken breasts from water and cut into bite size portions.  On medium high heat add soup and gravy to chicken stock in pot.  Stir with whisk until smooth.  Break off biscuit dough into small pieces and add to mixture in pot.  Biscuit dough will sink when done.  Add chicken to the pot.  Let simmer a few minutes and serve hot.
