UTENSILS
INGREDIENTS
1 lb. fresh fish
1 tbsp of white wine
1/2 tsp of salt
1 tbsp of sesame oil
1 tbsp of oil
1 tsp of sugar
2 tbsp of soy sauce
1 tbsp of corn starch
2 tbsp fermented black beans, minced

Cut fish into 2-inch pieces. Mix wine and salt together in a large bowl and add the fish pieces. Coat well and let sit for 15 minutes. When removed, pat dry.

Pour water into a wok about 2/3 full. Heat the water to boiling. Dip fish pieces in the sauce and place on a rack that sits over the wok.
