METHOD

Break Eggs into hte mixing bowl; whisk with a fork; add drained sweetcorn, and mix well.

Sieve the flour & baking powder into the same bowl, stir well and season.
|
|
Grate the cheese into the bowl and mix thoroughly. Work mixture until it forms a soft ball.

|
Lightly flour your hands and work surface. Tip out the mixture and with your hands divide the mixture into 8 to 12 even sized balls. Flatten each slightly with palm of your hand.

Place marg/butter in a preheated frying pan over a medium heat. Once bubbling, add 4/5 sweetcorn balls. Fry until golden brown on both sides. Cooking time will vary according to thickness of the fritters.

|
Once Fritters are golden brown and cooked through, remove from the pan and rest on kitchen paper.
