Red Red Wine - UB40
Sangria
One of my absolute favorites! The appeal of this Spanish drink is all about taking your favorite red wine, your favorite fruits and experimenting. Here is how I like it...
Ingredients:
1 bottle red wine (Rioja preferably)        1 can Sprite (or soda water)
2 shots brandy                                     thinly sliced oranges
apple crush                                          fresh lime juice
1/2 cup sugar (melted in hot water)        fresh orange juice
cherries (pitted and halved)
Mix the wine, brandy, sprite and fruit juices in a pitcher. Remember your wine is the main ingredient so don't overdilute it. Add the melted sugar and fruit slices. Chill overnight, though the longer the better. Add ice cubes in pitcher before serving.
Banana Daiquiri
Ingredients:

2 oz. light rum                                 1 banana, cut into pieces
2 oz. banana liqueur                         1/2 oz. whipping cream
fresh lime juice                                1/2 cup crushed ice
1/2 tsp. sugar                                   1 strawberry
Toss everything together (except the strawberry) in a blender and blend on high until smooth. Pour into a chilled cocktail glass. Garnish with strawberry.

As an alternative, you may omit the sugar, cream and ice and substitue with 1/2 cup vanilla ice cream (or strawberry or banana).
Tequila Sunrise
Ingredients:
2 oz. tequila                                dash of grenadine
fresh orange juice                        cracked ice & ice cubes

Shake tequila, OJ and cracked ice. Strain over rocks in a glass. Top with a dash of grenadine (do not stir in!)
Amaretto Freeze
Ingredients:
1 1/2 tbsp. Amaretto
1/2 cup vanilla ice cream
1 Maraschino cherry

Blend ice cream and Amaretto until smooth. Serve in a cocktail glass, topped with maraschino cherry.
