Yes, cats have personalities - sometimes strong ones. It's why an older person with limited mobility may not want an active cat, or a family with ten kids may not want a cat who likes quiet. There are lots of ways to research - search the internet for choosing a cat breed, for example.
The easiest way to start is hair. This plays into maintenance. Lots of folks love that Persian hair, but I know very few Persian owners who don't shave their cats at some point. They require daily grooming to avoid mats in their fur. Contrary to what most folks think, the Sphynx is a very high maintenance breed that requires regular bathing. Granted, bathing a Sphynx isn't exactly rocket science, but it is something you have to undertake frequently.
Shorthairs actually do tend to shed a lot; however, they require not much more than daily petting and weekly grooming. Many of the non-Persian longhairs require the occassional groom or bath, but it's not too much of a problem. Some, like the Turkish Angora lack an undercoat, which means combing and bathing aren't something that have to be done frequently.
Now, to personality, and here's where the research comes in. If you want a cat that will interact vocally with you, look to the Siamese/Oriental/Colorpoints, or if you prefer a moderate type with this personality, try a Burmese or Tonkinese. A playful non-wild cat with a wonderfully sweet temperament and who is devoted to their owner is the Ocicat - the real beauty of this breed is their wild looks, without the worry of wild blood (which can create very serious temperament problems). The Cornish Rex will leave you laughing on a daily basis as they explore their world with reckless abandon. The incredibly playful Abyssinian, Somali and Turkish Angora will keep you both entertained and challenged. Maine Coons get along well with other animals; British Shorthairs are devoted to their people, and the calm and beautiful Russian Blue is a loyal and non-destructive option for a busy life. Exotics are Persians without the high maintenance coat...and so many more breeds offer choices for you to select the breed that will fit best into your life.
