Oven Jambalaya



2 cups Uncle Ben's Converted Rice (Not cooked)
1 Stick Margarine
1 tbsp. Thyme

1 tsp. Black Pepper (about "2 stars" - more or less to taste)
« cup Chopped Parsley
2 Bay Leaves
1 lb. Chicken Breast (Cut up, not cooked)
1 lb. Smoked Sausage (Hot if you prefer)
1-2 lb. Shrimp (with their juice)(Optional)
1 Green Pepper (Chopped)
1 bunch Green Onions & Tops (Chopped)
1 can Campbells French Onion Soup*
1 can Campbells Beef Broth or Chicken Broth*
1 8oz can Tomato Sauce* (if you leave shrimp out, add a tomato can worth of extra water)

Put all ingredients into a covered pot (I double the recipe and use a large cast iron dutch oven) and
bake @ 375-400ø for 1 hour 15 minutes.  Stir at 45 minutes. 

The following trick helps hold in the moisture and can reduce cooking time.  Cut a brown paper
shopping bag to slightly larger than the pot.  Soak the cut-out in water and lay it inside on top of the
mixture.  If you use this, stirring isn't necessary.  

This recipe has fooled real cajuns!  Just make sure they don't see the soup cans.
