Rich Golden Cake

Makes: (2) 9" layers -or- 13"x9" oblong

2-1/8 c. sifted Gold Medal all-purpose flour
1-1/2 c. sugar
3 t. baking powder
1 t. salt
2/3 c. soft shortening
1 c. milk
1-1/2 t. orange extract
3 eggs (1/2 to 2/3 cup)

Preheat oven to 350 degrees Fahrenheit.  Grease and flour pans.

Sift together flour, sugar, baking powder, and salt.  Add shortening and milk,
extract, and eggs.  Beat 2 minutes on high speed.

Pour into prepared pans.  Bake until cake tests done, about 30-35 min. for 
layers, 40-45 min. for square or oblong.  Cool.  Frost with Orange Icing.

Orange Icing
------------

1/2 c. soft shortening
4-1/2 c. sifted confectioner's sugar
4-1/2 T. orange juice concentrate
1 t. grated orange rind

Blend together soft shortening and confectioner's sugar.  Stir in orange juice
concentrate; mix until smooth and creamy (hand mixer is excellent for this).  
Add grated orange rind.
