The other recipe is a very rich, very chocolaty, very elegant chocolate-covered cherry cookie. It's the kind that you eat with a napkin and a cup of really good coffee. Hmmmmmmmmm! Thanks Aunt Frances and Uncle Gene! Hope you enjoy these recipes as much as we did....now if I could just get some of my Uncle Billy's candy recipes!!!
Combine 1/2 pound bulk pork sausage and 1/3 cup chopped green onions in a skillet; cook over medium heat until sausage is browned, stirring to crumble. Drain well. Set aside. Combine 1 (6 ounce) package of biscuit mix, 1/2 teaspoon dry mustard, and 1/4 teaspoon ground red pepper; add 1/2 cup milk, stirring just until moistened. Stir in sausage mixture and 1/2 cup (2 ounces) finely shredded cheese (mixture will be thick). Spoon into greased miniature (1 3/4-inch) muffin pans,filling two-thirds full. Bake at 400° for 12 to 14 minutes or until muffins are golden. Remove from pans immediately; serve warm. Yield: about 2 1/2 dozen.
Combine 1 1/2 cups flour and 1/2 cup cocoa powder. Set aside. In a mixing bowl beat 1/2 cup butter or margarine with an electric mixer until softened. Add 1 cup sugar, 1/4 teaspoon soda, 1/4 teaspoon baking powder and 1/4 teaspoon salt. Beat until combined. Add 1 egg and 1 1/2 teaspoon vanilla; beat. Gradually beat egg mixture into flour mixture. Shape dough into 1-inch balls; place on an ungreased cookie sheet. Press down center of each ball with thumb. Drain 48 maraschino cherries or about 1 (10 ounce) jar., reserving juice. Place a cherry in the center of each cookie. In a small saucepan combine 1 (6 ounce package of semi-sweet chocolate piecesSEE NOTE BELOW and 1/2 cup sweetened condensed milk; heat until chocolate is melted. Stir in 4 tsp reserved cherry juice. Spoon about 1 tsp frosting over each cherry, spreading to cover cherry. If necessary, thin frosting with additional cherry juice. Bake in 350° oven about 10 minutes or until done. Remove cookies to wire rack to cool. NOTE: Be sure to use real chocolate pieces (not imitation), so the cookies bake property. Makes 48 cookies.
