This is a very easy and quick to prepare recipe but if you're an authentic Fettucine Alfredo addict, you may be disappointed. It is still very good. Perhaps this version should have a name other than Alfredo :)
1 cup lowfat cottage cheese
1 cup lowfat milk
1 egg yolk
1/2 teaspoon freshly ground pepper
2 tablespoons butter
1/2 cup grated Parmesan (divided)
8 ounces yolk free pasta
In blender, combine cottage cheese, milk, egg yolk and pepper. Puree until smooth. In a small saucepan, melt butter over low heat. Add puree and bring to a simmer, stirring occasionally. Stir in all but 4 tablespoons Parmesan. Meanwhile, cook noodles according to package directions, drain. Toss with sauce. Sprinkle with remaining parmesan. Makes 4 servings, 355 calories each.
