The following recipes are from booklets published by the Pet Milk Company in the 1940's and early 50's.

Crispy Fried Chicken
from "Better Cooking for 2 or 4 or 6" by Mary Lee Taylor, published 1951

Golden crust, tender juicy meat, smooth gravy--made the Pet Milk way

DIRECTIONS INGREDIENTS FOR 2 FOR 4 FOR 6
1. Put into bowl... cut-up CHICKEN 1-1/2 lb. 2-1/2 lb. 3-1/2 lb.
2. Pour over chicken... PET MILK 1/2 cup 1 cup 1-1/2 cups
3. Let stand in refrigerator 2 hours or more. Drain well and save milk for gravy.
4. Roll chicken in mixture of... FLOUR
SALT
PEPPER
1/3 cup
3/4 teaspoon
few grains
1/2 cup
1-1/2 teaspoons
1/8 teaspoon
3/4 cup
2 teaspoons
1/8 teaspoon
5. Place on paper towel or brown paper.
6. Slowly heat 1/4-inch of shortening in heavy skillet.
7. Brown chicken slowly on all sides in hot shortening until drumstick is tender when pierced with fork. Remove chicken from skillet; keep hot.
8. Drain off fat from skillet, then measure and return to skillet 1 tablespoon fat for 2; 2 tablespoons for 4, and 3 tablespoons for 6.
9. Blend into fat in skillet... FLOUR
SALT
PEPPER
1-1/2 tablespoons
1/3 teaspoon
few grains

3/4 teaspoon

10. Stir in... WATER 6 tablespoons 3/4 cup 1-1/4 cups
11. Boil and stir 2 minutes. Add milk drained from chicken; stir and heat until steaming hot, but do not boil.
12. Serve hot with the chicken.

Coconut Icebox Pie
from "Better Cooking for 2 or 4 or 6" by Mary Lee Taylor, published 1951

1. Press in bottom and on sides of tart pans or pie pans a mixture of... graham cracker CRUMBS
soft BUTTER
SUGAR
2/3 cup
2 tablesp.

1-1/3 cups
1/4 cup
1/4 cup
1-1/4 cups
3-1/2 tablesp.
3-1/2 tablesp.
2. Chill.
3. While crumb crust chills, mix... SUGAR
CORNSTARCH
SALT
1-1/2 tablesp.
2 teasp.
few grains
3 tablesp.
4 teasp.
1/8 teasp.
1/4 cup
2 tablesp.
1/4 teasp.
4. Stir in mixture of... PET MILK
boiling WATER
1/3 cup
1/3 cup
2/3 cup
2/3 cup
1 cup
1 cup
5. Stir over boiling water until smooth; cook 10 minutes. Remove from heat.
6. Stir into beaten...  EGG YOLKS 1 2 3
7. Cook and stir over boiling water 2 minutes longer. Cover and cool.
8. When custard is cold, add... VANILLA 1/3 teasp. 3/4 teasp. 1 teasp.
9. Pour into crumb-lined tart pans or pie pan.
10. Beat until stiff... EGG WHITES 1 2 3
11. Beat in gradually...  SUGAR 2 tablesp. 4 tablesp. 6 tablesp.
12. Arrange on custard, spreading to the edge of crust to seal in custard.
13. Sprinkle top with...  shredded COCONUT 3 tablesp. 1/3 cup 1/2 cup
14. Chill 3 hours or longer.
