Cheesecake
Ingredients:
Topping: 1
egg yolk baked almond flakes cream
Filling: 250g
cream cheese 180g
cream 1
egg white 1
egg yolk
1/4cup
sugar 1
1/2tbsps lemon juice
1 1/2tbsps
gelatine
2tbsps
rum 4tbsps
water 3tbsps
raisins
Base: 1
sponge cake
Methods:
(1)
Cut
sponge cake horizontally into 1cm thick slices. Trim one piece into a 1x1cm
square. Put sliced cake into cake tin lined with baking paper.

Mix rum
and raisins and soak raisins thoroughly. Whip cream with a beater.
(3)
Mix
gelatine with water. Sand in hot water.
(4)
Whip
cream cheese until smooth. Add egg yolk and mix well. Add sugar and mix well. Pour
in lemon juice.

Add
gelatine solution and rum with raisins and mix. Fold in whipped cream.
(6)
Beat egg
white until ‘peaks’ are formed. Stir in cream cheese mixture.
(7)
Pour half
of the cake mixture into the tin. Place the small slice of sponge cake. Pour in
another half of the mixture. Refrigerate.
(8)
Put egg
yolk into piping bag. Decorate the cake with egg yolk.
(9)
Grill
until light brown. Remove. Decorate the sides of the cake with cream and almond
flakes. Serve ~
