Sour Cream Almond Cake

 

Serve: 25cm round tin x1

 

Ingredients: 100g butter   120g sugar    1/2 cup sour cream     2 eggs

                    150g self-raising flour 2tbsp almond flakes    2tbsp apricot jam

                    1/2 tsp vanilla essence       1/2 tsp icing sugar     

 

Methods:

(1)     Sift self-raising flour

(2)     Mix butter and sugar. Beat until light and creamy. Add sour cream and beat for a while.

(3)     Add vanilla essence and mix well. Stir in self-raising flour.

(4)     Pour the mixture into a round cake tin with baking paper. Sprinkle almond flakes on top.

(5)     Bake at 180℃ in preheated oven for 30 minutes. Remove and leave to cool.

(6)     Cut horizontally. Brush with apricot jam. Sift icing sugar on top. Serve ~
