Whisky cake with raisin

 

Serve:      18cm square tin x1

 

Ingredients:    180g butter       180g self-raising flour        5tbsp Burbon whisky

                        3 eggs       90g golden raisins     1/2 grated lemon rind 180g sugar

 

Methods:

(1)       Add golden raisins in burbon whisky and soak overnight

(2)       Beat butter and sugar until light and creamy

(3)       Separate egg white and egg yolk. Beat egg yolk with butter mixture.

(4)       Mix with soaked raisins and grated lemon rind.

(5)       Beat egg white until stiff

(6)       Divide flour and egg white mixture into 3 portions. Fold 1 portion to butter mixture each time and mix well

(7)       Put the ingredients above into greased cake tin.

(8)       Bake at 180℃ in preheated oven for 40 minutes. Leave to cool and cut into pieces. Serve.
