Large Pot Siphon tube Fermenter (sealable container to which you can fit an airlock) Airlock Bottles (and lids/caps) Spoon (wooden) All equipment must be cleaned and sterilised |

Ingredients | ||||||||||||||||||||
4 lb (1.5 kg) honey Lemon Juice Cinamen (as much as you want for taste. I wouldn't use more than 2 tsp) 1 gallon (4.54 litres) water 1 tsp yeast |

Method | ||||||||||||||||||||
Boil water and cinamen. When hot add honey and lemon juice (about 1 tsp). Cool and siphon into fermenter. When cool add yeast. Fit airlock Leave for about a week to ferment in a dark place. Siphon into clean fermenter and leave for about 1 month. Siphon again into clean fermenter and leave for another month. Bottle and leave for a few months before drinking. |
