Rossy's Banana Cream Pie

Rossy was the first visitor to send 'Hummm...sweeeets...' a recipe of her own. She lives in Mexico but she was introduced to this address through a friend of her who lives in Italy but actually is from Uruguay. I would love to have many recipes from all over the world. Ingredients

. 1 (9-inch) baked pastry shell
. 3 tablespoons cornstarch
. 1 2/3 cups water
. 1 can condensed milk
. 3 egg yolks beaten
. 2 tablespoons margarine or butter
. 1 teaspoon vanilla extract
. 3 mmedium bananas, sliced and dipped in lemon juice and drained
. whipped cream

How to Prepare

In heavy saucepan, dissolve cornstarch in water, stir in sweetened condensed milk and egg yolks. Cook and stir until thickened and bubbly. Remove from heat, add margarine and vanilla. Cool slightly. Arrange 2 bananas on bottom of prepared pastry shell. Pour filling over bananas, cover. Chill 4 hours or until set. Spread top with whipped cream, garnish with remaining banana slices. Refrigerate leftovers.

MICROWAVE: In 2-quart glass measure, combine cornstarch, water, sweetened condensed milk and egg yolks as above. Cook on 100% power (high) 5 to 6 minutes, stirring after 3 minutes then after each minute until thickened. Proceed as above. Microwave ovens vary in wattage and power output, cooking times may need to be adjusted.
