Meringues |
Make about 24 4 eggs whites 1/4 tsp salt 1 1/4 cups caster suger |
1/2 tsp almond essence 1 cup of whipping cream |
1, Preheat the oven to 225F. Greae and flour tw large baking sheets. Beat the egg whites and salt in a metal bowl. When they start to form soft peaks, add half the sugar and continue beating until the mixture holds stiff peaks. 2, With a large metal spoon, fold in the remaining sugar and almonds essence, if using, Pipe or spoon the meringue miture on to the baking sheets. bake for 2 hours, turn off the oven. Loosen the meringues, invert, and set in another place on the shhets to prevent sticking. Leave in the oven until cool. Whip the cream and use to fill the meringues. |

Prechill all ingreadients. Using a bar spoon, carefully pour each ingredient into a chilled pony glass in the order listed. |
