Carrot Cake


  • 2 C flour
  • 2 t baking powder
  • 1 1/2 t baking soda
  • 1 1/2 C vegetable oil
  • 2 3/4 C grated carrots
  • 3/4 C walnut
  • 1 C shredded coconut
  • 1 t salt
  • 2 1/2 t cinnamon
  • 4 eggs
  • 2 C sugar
  • 1 8 oz. can crushed pineapple {drained}

Sift flour, baking powder, baking soda, salt, and cinnamon in a medium bowl. In a large bowl mix sugar, oil and eggs.
Add flour a little at a time to sugar mixture until all of it is incorporated. Add carrots, pineapple, nuts and coconut. Mix
well. Pour into 3 greased and floured cake pans. Bake in 350 degree oven for 35-40 minutes.
Frost with Cream Cheese Frosting.
