Sift flour, baking powder, baking soda, salt, and cinnamon in a medium bowl. In a large bowl mix sugar, oil and eggs. Add flour a little at a time to sugar mixture until all of it is incorporated. Add carrots, pineapple, nuts and coconut. Mix well. Pour into 3 greased and floured cake pans. Bake in 350 degree oven for 35-40 minutes.
Frost with Cream Cheese Frosting.
