- Have your pie shell ready to go before you cook the filling.
- What I like to do is get bowls and the heavy saucepan I am going to use to cook the filling out. Put the butter and vanilla in small bowl #1. Put the egg whites in Large bowl #2. Put the egg yolks in medium bowl #3.
- In a large heavy pan mix the sugar, salt, flour and cocoa thoroughly. Make sure there are no clumps of cocoa or flour.
- Add the milk slowly, mixing well as you go. Bring mixture to the boiling point stirring constantly until it thickens. Remove pan from heat. Mix 1/2 cup of boiled filling to the egg yolks and mix well. Pour the egg mixture back into the pan and replace on heat bringing to boil again (constantly stirring). When you see the first bubble of a boil remove from heat and add the butter and vanilla. Mix well. Pour filling into pie shell. Top with meringue. Bake in 350 degree oven til meringue is browned.
