Egg In A Hole

  • 2 slices of bread
  • 2 eggs
  • salt and pepper
  • butter
Butter one side of each slice of bread. Use a shot glass or donut hole cutter to cut a hole in the center of each slice. Save the bread cut out of the center. Heat a non-stick skillet to med. high (depending, of course on your range). The skillet should be hot enough so the egg white will cook and the bread will toast without cooking the yolk. Break an egg in the pan. Use a knife to spread the white out as it will cook better. Place the bread on top of the egg butter side up with the yolk showing through the hole. When the butter starts to melt flip the egg over. When the bread is golden brown flip over on plate, salt and pepper and serve. You can toast the centers of the bread to serve on the side.
