Chicken and Dumplings

Chicken:
  • 3 lbs. chicken
  • 6 C chicken broth
  • 1/4 C celery
  • 1/8 C diced carrots
  • 1 t cornstarch
  • salt & pepper to taste

Dumplings:
  • 1 1/2 C sifted flour
  • 1/2 t salt
  • 1 egg yolk
  • warm chicken broth
Chicken:
  1. Boil the chicken in broth with celery, carrots, salt and pepper until chicken is tender.
  2. Pull chicken apart into strips and add more broth if necessary.
Dumplings:
  1. Sift flour and salt together.
  2. Add egg yolk and broth. Mix until it's the consistency of which you can handle.
  3. Roll out to 1/4" thickness on a floured surface.
  4. Cut into strips 1" wide by 3" long. The dumplings will grow considerable while cooking.
  5. Bring chicken to boil and add dumplings one at a time.
  6. Cover and cook for 20 minutes. Turn the heat down if it wants to boil over.

Let cool a bit so it will thicken and serve.
