Definition
Acini de Pepe Peppercorn-size pieces of cut spaghetti.
Capellini (angel hair) The thinnest of the long spaghetti.
Conchigle Medium to small shell shapes with or without grooves.
Conchiglioni Jumbo pasta shells with or without grooves, usually filled and baked.
Couscous ("koos-koos") The tiniest form of pasta made from granular semolina.
Egg Noodles Flat or curly short pasta strips usually made with eggs or egg yolks. The width vary from about 1/8 to 1/2 inch.
Farfalle (bow-ties) Shaped like bow-ties. Miniature bow-ties are known as tripolini.
Fettuccine Long, flat noodles, usually 1/4 inch wide.
Fusilli Long or short spring-shaped pasta.
Japanes Curly Noodles Quick-cooking wavy thin long noodles sold in rectangular "bricks" about 1 inch thick.
Lasagna Flat noodle about 2 inches wide with either ruffled or straight edges.
Linguine Long flat thin noodle usuallt 1/8 inch wide.
Macaroni (elbow) Short, curved, tubular-shaped pasta.
Mafalda (mini-lasagne noodles) Short, flat, narrow noodle with ruffled edges.
Manicotti (Cannelloni) Large, 4 inch hollow pasta tubes that are usually stufed and baked.
Mostaccioli Short, diagonal-cut macaroni about 2 inches long, smooth or with grooves.
Novelty Pasta Shapes Seasonal or other pasta shapes, such as pumpkins, trees, rabbits, hearts, states, cars, quilts, etc., sometimes flavored.
Penne Narrow straight diagonal-cut macaroni about 1 1/4 inches long, smooth or with grooves.
Radiatore (pasta nuggets) Shaped like ruffled fins of car radiators or air conditioners.
Ramen Noodles Quick-cooking, deep-fried noodles used dry or cooked.
Ravioli Square filled pasta (usually stuffed with cheese, meat or spinach).
Rice Noodles Translucent thin strands made from rice flour and water.
Rigatoni Short-cut, wide macaroni about 1 inch long with grooves.
Rosamarina (Orzo) Resembles rice but is slightly larger and longer.
Rotelle Wider version of short-cut corkscrew-shaped pasta.
Rotini Short-cut corkscrew-shaped pasta. Wider version is called rotelle.
Spaghetti Long thin solid pasta strands.
Tortellini Small noodle squares filled then folded diagonally and shaped into rings.
Vermicelli Long very thin solid strands, thinner than spaghetti but thicker than capellini.
Wagon Wheels Small round pasta resembling a wheel with spokes.
Ziti Short-cut, 2 inch straight macaroni with smooth surface.
