Cutout Cookies

  • Dough should be stiff and moist enough to roll easily, but
not so stiff that it breaks apart. Be sure to measure ingredients
accurately to get the best possible consistency.
  • When the dough is soft there is usually a refrigeration
time allowed for. Be sure and follow it.
  • Work with a small amount of dough at a time, keeping the
    rest refrigerated and covered.
  • Roll out dough on a slightly floured surface. Sometimes
you can use powdered sugar instead flour.
  • For tender cookies handle the dough as little as possible.
  • Follow recipe directions for cookie sheet preparation and
placement of cookies on pan to avoid sticking and to preserve
    shapes.
  • Cool cookie sheets between bakes to keep dough from
    spreading.
  • Remove baked cookies from hot cookie sheets according to
instructions, using a wide metal spatula for support.

Storage Tips

  • Most unbaked cookie dough can be frozen up to a year when
properly wrapped in an airtight, moistureproof wrap.
  • Most baked cookies freeze well and can be kept frozen for
    three to six months.
  • For the best flavor and appearance, postpne frosting and
decorating the cookies until they are removed from the freezer.
