Peanut Butter Coffee Cake
Ingredients for Topping
1/2 Cup Packed Brown Sugar
1/2 Cup Flour
1/4 Cup Peanut Butter
3 Tablespoons Butter
Ingredients for Batter
2 Cup Flour
1 Cup Packed Brown Sugar
2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Milk
1/2 Cup Peanut Butter
2 Eggs
1/4 Cup Butter
TOPPING
Combine 1/2 Cup of brown sugar & 1/2 Cup flour; Cut in 1/4 cup Peanut Butter & 3 Tablespoons butter till crumbly. Set aside.
BATTER
Combine 2 Cups flour, 1 Cup Brown Sugar, Baking Powder, Baking Soda, and Salt. Add Milk, 1/2 Cup Peanut Butter, Eggs, and 1/4 Cup Butter. Beat with Mixer on low speed till blended. Beat on high for 3 minutes, scraping bowl frequently.
Pour into a greased 13x9x2-inch pan, spreading evenly. Sprinkle with topping mixture. Bake in a 375 degree oven for about 30 minutes, or until toothpick inserted in center comes out clean.
