Ale

"The Forkbeard himself now, from a wooden keg, poured a great tankard of ale, which must have been the measure of five gallons...It was the victory ale."
Marauders of Gor (pg 82)

"Many were the roast tarsk and roast bosk that had roasted over the long fire, on the iron spits. Splendid was the quality of the ale at the tables of the Blue Tooth..."
Marauders of Gor (pg 191)

"The Forkbeard greets you!' shouted Ivar. I blinked. The hall was light. I had not understood it to be so large. At the tables, lifting ale and knives to the Forkbeard were more than a thousand men."
Marauders of Gor (pg 194)

Ale on Gor seems very similar to ale on Earth. It is stored in kegs and served in tankards.

Fermented Milk Curds

"By one fire I could see a squat Tuchuk, hands on his hips, dancing and stamping about by himself, drunk on fermented milk curds, dancing, according to Kamchak, to please the sky."
Nomads of Gor (pg 28)

Fermented milk curds are common in the Plains. Like some of the other drinks listed, this beverage is not exported and does not hold up well to transport, so it is not served in Kassau.

Falarian wine

"Among these petitioners came one fellow bringing with him the promise of a gift of wine, a wine supposedly secret, the rare Falarian, a wine only rumored among collectors to exist, a wine supposedly so rare and precious that its cost might purchase a city."
Mercenaries of Gor(pg 158)

This wine is uncommon and unlikely to ever be found within the Village. As with some other drinks listed, this beverage is not served in Kassau.

Kalana

"I do not wish to come home with you now, she said lightly, a bit of kalana spilling from the silver goblet she held."
Rogue of Gor (pg 157)

A very potent dry red wine, made from the fruit of the Ka-la-na tree. This drink is usually served in a goblet and is served room temperature. If a Free requests it chilled, respectfully let them know that kalana is served at room temperature and that you will have to add ice to chill it, which will dilute it. Offer the option of one of the red wines of Ar, which hold up well to chilling to suit Their taste for a chilled red wine. If They insist on it being served cold, do as They wish, of course, and add ice.

Kal-da

"Kal-da is a hot drink, almost scalding, made of diluted ka-la-na wine, mixed with citrus juices and stinging spices. I did not care much for the mouth warming concoction, but it was popular with some of the lower castes, particularly those who performed strenuous manual labor. I expected its popularity was due more to its capacity to warm a man and stick to his ribs, and to its cheapness (a poor grade of Ka-la-na was used in its brewing) then to any gustatory excellence."
Outlaw of Gor (pg 76)

"I had hardly settled myself behind the table when the propietor had placed a large, fat pot of steaming Kal-da before me. It almost burned my hands to lift the pot. I took a long, burning swig of the brew and though, on another ocassion, I might have thought it foul, tonight it sang through my body like the bubbling fire it was, a sizzling, brutal irritant that tasted so bad and yet charmed me so much I had to laugh."
Outlaw of Gor (pg 78)

"Even the proprietor slept, his head across his folded arms on the counter, behind which stood the great Kal-da brewing pots, at last empty and cold."
Outlaw of Gor (pg 80)

An alcoholic beverage made of ka-la-na wine diluted with citrus juices and mixed with strong spices and sliced fruits, served hot.

Liqueurs

"It is time for the liqueurs, slave,' I told her 'Yes, Master,' she whispered. 'Ah,'said Glyco.'The liqueurs!' First from the kitchen, bearing her tray, came the voluptuous slave of Aemilianuus. Behind her, too with her tray, came the little dark-haired slave. In a moment both were derferntially serving. The collared softness of the dark-haired girl well set off the the metal of the tray, and the small multicolored glasses and bottles upon it."
Gaurdsman of Gor (pg 254)

There are a wide variety of liqueurs, usually made from spices and fruits, but occasionally made from blackwyne, nut extracts or even chocolate extracted into alcohol. These liqueurs are served in tiny, stemmed glasses, and the bottles and glassware for them is as decorative as the liqueurs are sweet and heavy.

Mead

"In the north generally, mead, a drink made with fermented honey and water, and often spices and such, tends to be favored over paga."
Vagabonds of Gor (pg 16)

" 'Here Jarl,' said Thyri, again handing me the horn. It was filled with the mead of Torvaldsland, brewed from fermented, honey, thick and sweet."
Maruaders of Gor (pg 90)

"Bera went to the next man, to fill his cup with the mead, from the heavy hot tankard, gripped with cloth, which she carried."
Marauders of Gor (pg 78)

"Many were the roast tarsk and roast bosk that had roasted over the long fire, on the iron spits. Splendid was the quality of the ale at the tables of the Blue Tooth. Sweet and strong was the mead."
Marauders of Gor (pg 191)

"I held up the large drinking horn of the north. 'There is no way for this to stand upright,' I said to him, puzzled. He threw back his head again and roared once more with laughter. 'If you cannot drain it,' he said, 'give it to another!' I threw back my head and drained the horn."
Marauders of Gor (pg 89)

A fermented beverage made of honey, served in Torvaldsland. This rich amber beverage is lightly fermented and may be spiced during the fermentation process, usually with clove. It is often served in a large horn, though Mistresses may prefer it in a goblet.

Paga

"I decided, if worse came to worst, that I could always go to a simple Paga Tavern where, if those of Tharna resembled those of Ko-ro-ba and Ar, one might, curled in a rug behind the low tables, unobtrusively spend the night for the price of a pot of Paga, a strong, fermented drink brewed from the yellow grains of Gor's staple crop, Sa-Tarna, or Life-Daughter."
Outlaw of Gor (pg 74)

A grain-based, distilled hard liquor akin to whiskey; sometimes served warm, this is the drink most often served in taverns. In Kassau, it is served from pitchers dipped or tapped from kegs in the kitchens. Botas are for traveling, and are not used to serve paga in the Great Hall of Kassau. Paga bowls, three-footed bowls most commonly used for serving warmed paga, are available for any Jarl or Master who wishes a large quantity of paga at once, rather than a smaller amount, refilled often.

Rence Beer

"I had also been used to carry the heavy kettles of rence beer from the various islands to the place of feasting."
Raiders of Gor (pg 41)

"At such times there is drinking of rence beer, steeped, boiled and fermented from the crushed seeds and the whitish pith of the plant."
Raiders of Gor (pg 18)

"I had carried about bowls of cut, fried fish, and wooden trays of roated tarsk meat, and roasted gants, threaded on sticks, and rence cakes and porridges, and gourd flagons, many times replenished, of rence beer."
Raiders of Gor (pg 44)

Rence beer is not commonly found as far north as Torvoldsland, but when it is, it is a clearish, light beer, much like the American beers of Earth.

Sul Paga

"Sul paga, as anyone knew, is seldom available outside of a peasant village, where it is brewed. Sul paga would slow a thalarion. To stay on your feet after a mouthful of Sul paga it is said one must be of the peasants, and then for several generations. And even then, it is said, it is difficult to manage. There is a joke about the baby of a peasant father being born drunk nine months later."
Slave Girl of Gor (pg 414)

This alcoholic beverage made from suls is like an extremely potent vodka on Earth. It is not exported from the Peasant Villages in which it is distilled. On occasion, some may be taken in a raid, but it is likely that the Raiders will manage that stock Themselves as Raiders are won't to do. Therefore, sul-paga is not served in Kassau.

Ta-wine

"It was Ta wine, from the Ta grapes of the terraces of Cos...In the last year heavy import duties had been levied byt the high council of Vonda agains the wines of certain other cities, in particular against the Ka-la-nas of Ar."
Fighting Slave of Gor (pg 306)

Ta-wine is a dry wine made from Ta grapes from the Isle of Cos. It is commonly a red varietal, and is therefore served at room temperature. However, since the only difference between a red wine and a white wine is whether or not the wine is fermented with its musts(skins) on or not, it is possible that there may be white versions of this wine on Gor.

Turian wine

"I did not much care for the sweet, syrupy wines of Turia, flavored and sugared to the point where one could almost leave one's fingerprint on their surface."
Nomads of Gor (pg 83-84)

Turian wine seems to be thicker and much sweeter than most other wines produced on Gor. Though small amounts might be kept, it's rare that this drink is ordered in Kassau.

Wine

"In a Gorean supper in a house of wealth, in the course of the supper, with varied coures, eight to ten wines might be served, each suitably and congruously matched with respect to texture and bouquet not only to one another but to the accompanying portions of food."
Fighting Slave of Gor (pg 277)

"Wine, incidentally, is often mixed with water in Gorean homes. This is primarily because of the potency of many Gorean wines."
Guardsman of Gor (pg 235)

There are many common types of wine on Gor not specific to certain regions or recipes. Some are dark and some will be light. The temperature at which it can be served will depend on the color of the wine. Often times, potent wine will be mixed with water to reduce its strong effect.
