Gaia's Vegetabl-Lentil Soup 2 cups lentils 2 slices bacon, crumbled 2 cans beef broth 1/2 cup chopped onion 1/2 cup chopped parsley 1/4 cup chopped carrots dash of thyme 3 Tbsp parsley 3 to 4 cloves garlic 1/4 tsp pepper 1/2 tsp dried oregano 2 lbs canned tomatoes 2 Tbsp red wine vinegar Rinse lentils, drain, place in kettle. Add beef broth, 5 cups water and remaining ingredients, except tomatoes and vinegar. Cover and simmer one and a half hours. Add tomatoes (break up large pieces) and vinegar. Cover; simmer for 30 minutes. Season to taste (serves 8-10)
