Corn Bread With Honey 1 1/2 c cornmeal 1/2 c flour 2 tsp sugar 1/4 tsp ginger 2 tsp baking powder 1/2 tsp baking soda 1 tsp salt 1 1/2 c buttermilk 1 tsp vanilla 1/4 c vegetable oil 2 eggs 2 Tbsp butter, melted 2 Tbsp honey Dash of cinnamon Dash of ginger Preheat the oven to 425 F. Combine the cornmeal, flour, sugar, baking powder, baking soda, ginger, and salt in a medium sized bowl. In a small bowl, beat the buttermilk, oil, vanilla, and eggs. Add the wet mixture to the dry mixture; mix thoroughly. Pour the batter into a greased 8x8x2-inch baking dish. Bake for 25 minutes. While cornbread bakes, blend the butrter, honey, cinnamon and ginger. Baste the top of the bread with the butter mixture during the final 5 minutes of baking. Yeild: 12 peices
