Crab-Bacon Bits


 
12 oz flaked crab meat
1/3 c seasoned bread crumbs
1/4 tsp minced garlic
1 Tbsp fresh chives
2 Tbsp white wine
1 tsp mustard
10 slices uncooked bacon, cut into thirds

Mix the crabmeat, bread crumbs, garlic, and chives in a medium-sized bowl.  
Mix the wine and mustard in a small bowl.  
Pourt the wine mixture over the dry ingredients; stir until the mixture is slightly sticky.  
If the Mixture is too dry, add more wine.  
Chill for at least 1 hour..
Pre-heat the broiler after the crab mixture has been chilled.  
Form the mixture into 1-inch balls.  
Wrap each ball with a strip of bacon; secure the bacon with a toothpick.  
Place on a broiler pan so they do not touch.  
Place the broiler pan approximately 4 inches away from the heat element.  
Broil for about 15 minutes, 
turning occasionally, until the bacon is crispy and the crab-bacon bit has been thoroughly heated.

Yield: About 30
