Prosperity Pudding 6 oz split green peas 2 Tbsp butter Salt Pepper Soak the peas in water overnight. Drain. Place the peas on a muslin cloth. TIe up the corners to form a bag. Allow enough room for the peas to swell. Bring a llarge pot of water to a boil; add the bag. Simmer for 3 hours. Transfer the peas to a bowl. Beat in the butter, salt, and pepper until smooth. Yeild: 3 servings
