Spider Woman's Cornmeal Porridge 1 cup cornmeal 3 1/4 cups to 4 cups milk or water or a mixture of both 1 1/2 tsp salt (to taste) Combine cornmeal with 1 cup cold liquid. When smooth add the reast of the liquid (either boiling water or scalded milk) Add salt and cook 30 minutes in top of a double boiler, stirring occasionally. Milk makes the most nourishing porridge. For children, serve with hone and milk. Avoid a refined cornmeal; purchase coarse cornmeal if possible. (Serves 3 to 4)
