Succotash 3 slices bacon, chopped 2 tomatoes sliced 1 medium onion chopped 2 cloves garlic, minced 1 Tbsp paprika 1 Tbsp minced parsley 3 cups corn 1 cup cubed squash 3 lbs fresh lima beans 1/2 cup cream Salt Pepper Fry bacon, tomatoes, oniopn and garlic until lightly brown in a large saucepan. Mix in the paprika and parsley; cook for 1 minute. Stir in the corn, squash, and lima beans until thoroughly coated with the spices. Add just enough water to cover. Simmer, cuvered, until the beans are tender and the water is reduced by half, about 30 minutes. Stir in cream, salt, and pepper. Bring to a simmer. Yeild: 8 servings
