Sweet Potatoes 

1/4 c olive oil
1/2 c honey
1/2 tsp grated lemon rind
1/2 tsp grated orange rind
Salt
Pepper
6 c diced sweet potatoes
3 apples, peeled and diced

Preheat oven to 350 F.  
Mix the oil, rinds, salt and pepper in a large bowl.  
Stir in sweetpotaotes and apples.  
Place in well oiled baking dish.  
Cover.  
Bake until golden brown, 5-10 minutes.

Yeild: 6 servings
