Sweltering Stew 2 lbs meat, cubed (any kind) 2 Tbsp oil 1 cup dried red beans 1 (8-oz) can yellow beans 1 Tbsp Tobasco sauce 1 large sweet red pepper, chopped 2 small hot peppers, chopped 3 large tomatoes, diced 1 medium yellow squash, peeled and diced 3 carrots, sliced 8 oz pearl onions, peeled 1 cup tomato sauce 4 cups water 3 freshly grated pepercorns 4 bouillon cubes, same type as the meat 2 tsp minced garlic 2 bay leaves 2 Tbsp dried oregano In a large pot, brown the meat in the oil. Add the rest of the ingredients. Cover. Simmer about 4 hours. Stir regularly. Yeild: 8 servings
