"Tuna Casserole" (My own little creation!)

1 pkg. Lipton's Sidekicks Butter & Herb Noodles
1 can tuna, drained
1 cup frozen mixed vegetables

Cook Sidekick's according to directions on package. Add tuna and vegetables during last 3 minutes of cooking. Remove from heat to thicken to desired consistency. Great for a quick lunch or dinner for 1-2 people.


Roasted Chicken Oreganato (Martha Stewart Living)

3.5 lbs. chicken, cut up (or chicken pieces)
4 potatoes(medium) scrubbed, cut into medium chunks
4 plum tomatoes, cut into medium chunks
1 onion (large) cut into medium chunks
1/4 olive oil
1/4 oregano, fresh, coarsely chopped (or use1/3 as much dried)
1/4 salt
1/4 pepper

Preheat oven to 450 degrees.
Toss chicken, potatoes, tomatoes and onion together in roasting pan. Add olive oil, oregano, salt and pepper. Toss. Arrange chicken over vegetables, skin side down. Do not cover. Roast until the juices run clear, about 45 minutes. Serves 4.

*You can also add chunks of zucchini, carrots and/or green peppers for added flavor and nutrition. I also like to roast it for up to 60 minutes for crispier chicken skin and more "roasted" veggies. Also, I find olive oil tastes best but you can substitute what you have on hand.


Super Easy Peanut Butter Cookies (Kraft Light Peanut Butter)

1 cup Kraft Light Peanut Butter
1/2 cup granulated sugar
1 egg

Preheat oven to 325 degrees.
Combine all ingredients together. Roll or scoop into small balls and flatten with a fork on ungreased baking sheet. Bake for 15 minutes. DO NOT OVERBAKE. Makes about 18-24 cookies.
*Add a handful of chocolate chips for a little something extra!


Banana Oatmeal Muffins (Company's Coming Muffins & More)

1.5 cups flour                                        2 eggs
1 cup rolled oats                                    1/2 cup cooking oil
1/2 cup granulated sugar                         1/4 cup milk
2 tsp. baking powder                              1 cup mashed bananas (3 medium)
1 tsp. baking soda
1/2 tsp. salt

Preheat oven to 400 degrees.
In large bowl measure first 6 ingredients. Stir to mix. Make a well in center.
In small bowl beat eggs until frothy. Mix in cooking oil, milk and bananas. Pour into well. Stir just to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake for 20-25 minutes. Makes 12 to 18.
*Add 1 cup fresh/frozen cranberries or blueberries for added flavor.
