HuckleBerry Pie
Huckleberries come in two varieties: Highbush(red) and Lowbush(purple). Red Huckleberries are tart- use in any recipe calling for Rhubarb. Purple huckleberries are sweeter, but more tangy than Blueberries.

Ingredients

1 single pie crust
4 cups Huckleberries
1 cup granulated sugar
2 tablespoons flour
1/8 teaspoon salt
2 eggs,beaten
1/4 cup whipping cream

Prepare pie crust. Combine eggs,sugar,salt and flour. Stir in huckleberries. Pour into unbaked pie shell. Slowly pour whipping cream over the top, being sure to cover the entire area.

Bake at 375 degrees F. Reduce heat to 350'F and bake a further 50 minutes, until filling is set. serve hot or cold, with ice cream or whipped cream.
