Back to Recipes index BISCUITS

(I think this recipe may have come for a 1940s Calumet baking powder recipe book, but that's just a guess.  It's been my mother's biscuit recipe all my life.)

Makes about 15 biscuits (depending on size of cutter.)

2 C. sifted flour
2 tsp. baking powder
½ tsp. salt
4 T. butter or shortening
¾ C. milk (about)

Sift flour once, measure, add baking powder and salt and sift again.  Cut in shortening.  Add milk gradually, stirring until soft dough is formed.  Turn out immediately on slightly floured board and knead 30 seconds, or enough to roll ½" thick and cut with floured cutter.  Bake on ungreased sheet in hot oven (450 F.) 12 to 15 minutes.

I have to admit, I cannot make these worth a darn.  But in my mother's hands, this recipe makes some of the best biscuits I've ever had anywhere.  Mom's also used this dough to top a chicken pot pie.
